Sweet Potato Noodles w Homemade Pesto Recipe

Veggie dinner vibes! Check out my sweet potato noodles with home-made pesto.

For my pesto you need: Arugula or dandelion greens (I fill my food processor to the top with greens) 1 cup toasted pumpkin seeds 1/2 cup parmesan 2 cloves of garlic 1/4 cup cashews 1/4 cup olive oil 1/8 cup lemon juice

Blend & enjoy! Seriously so good. And another easy way to get the kiddos to eat their veggies!
